Put the sauerkraut in a bowl and tear a little. Sprinkle the sugar on top, finely dice the onions and add them as well. Pour in the hot water and mix carefully until the sugar has dissolved. Finally add the oil and season with freshly ground pepper. If the whole thing is still too sour, just add sugar and water.
Jacket potatoes and ham are ideal side dishes.
Tip: You can often get fresh sauerkraut loose in good butcher shops.
