- Cut the stalks from the chard, remove the central rib if necessary.
- Cut the chard into fine strips, wash thoroughly and drain.
- Leave the bacon in a large saucepan. Fry the onions and garlic until golden.
- Add the potatoes and cover with the vegetable stock. Cook for 15 minutes in a closed saucepan over medium heat.
- Add the chard and cook for another 10 minutes over a moderate heat.
- Then mash everything with a potato masher.
- Season the stew with salt, pepper, some freshly grated nutmeg and smoked salt to taste.
- Cut the sausages into slices and heat them in the hot stew.
