Instructions
Peel and cook the potatoes.
During this time, leave out the bacon and fry the spring onions. Coarsely mash the potatoes, fold in the bacon with spring onions, sour cream (or creme fraich) and chives.
As a side dish or simply as a snack, absolutely delicious!
