Cut the onions and garlic into small cubes. Simmer in the hot oil and let it turn to glass. Add the tomato paste and let it sweat briefly. Chop the tomatoes well and use them to deglaze the onions.
Add the remaining spices (can be varied, possibly a little thyme, paprika powder or Italian herbs) and simmer for about 30 to 40 minutes, stirring repeatedly, until everything is well thickened. Season again to taste, remove the bay leaf and then spread it on the pizza crust when cooled.
