Sift the flour into a bowl and make a well in it. Mix 5 tablespoons of warm milk with the crumbled yeast and 3 tablespoons of sugar and 3 tablespoons of flour. Let the pre-dough rise in a warm place for about 30 minutes. Add the salt, butter, eggs, sugar and the lemon zest and mix with the flour to form a smooth dough. Cover and let rise again in a warm place for 30 minutes.
Grease a baking sheet or line it with parchment paper. Spread the dough on the baking sheet. Use a wooden spoon or your finger to make even holes in the dough. Then put cold flakes of butter in the holes and sprinkle with sugar.
If you like, you can put sliced almonds on top or mix the sugar with a little cinnamon beforehand.
