Wash, stone and quarter the plums. If the cake is made with other fruit, wash and prepare it as appropriate.
Dough for base and crumble:
Set aside about 150-200 g of the eggs and flour. Put the sugar, vanilla sugar, remaining flour and butter in a large bowl, mix with your hands and work into streusel.
Knead about half of the crumble mixture for the base in a second bowl with the two eggs and the remaining flour to form a dough and roll it out for the base on a baking sheet lined with baking paper. Prick the rolled out dough with a fork and then top it with the prepared fruit. After the topping, crumble the crumble dough over the fruit.

Bake the cake in the oven for about 35 minutes at 180 degrees.
