Instructions

  1. Finely slice the red cabbage.
  2. Put the lard in a large saucepan and heat. Add the sugar and let it caramelize slightly. Now put the red cabbage in the pot and immediately pour the vinegar over it. Peel the apples and cut into small pieces. Peel and quarter the onions. Add everything to the red cabbage. Add the bay leaves and the cloves and pour in the broth. Sprinkle some salt on top and mix everything together. Simmer on a medium flame for about 35 to 40 minutes.
  3. Now pour the boiling red cabbage into well rinsed glasses. When everything is distributed in the glasses, divide the liquid between the glasses. Carefully wipe the outside of each jar, especially unscrew the top rim and the lid.
  4. Place in the preserving kettle and fill in as much hot water that the glasses are about in the water. Set the boiler to 90 degrees and turn it on. Put on the lid and pay attention to when the temperature has been reached. The control lamp then goes out on my boiler. Let it simmer for 40 minutes. Then immediately take the glasses out of the kettle and place them on a kitchen towel, cover them with a thick terry towel and let them cool underneath.
