Process all the dough ingredients into a shortcrust pastry. Press the dough into the springform pan, forming an approx. 3 cm high rim. Prick the bottom several times with a fork.
In a bowl, sugar, cottage cheese, 8 eggs and 2 tablespoon. Mix the flour well with a hand mixer. Whip the cream until stiff and fold it carefully into the mixture.
Spread the drained mandarins or peaches on the shortcrust pastry and pour the quark mixture over it.
On the lowest rail of the oven for about 70-90 minutes at 150 degrees
to bake.
After the baking time, let the cheesecake stand for about 1/2 hour in the slightly open oven so that it can cool down a little. (The cheesecake will not sink then)
