Instructions

  1. Process 200 g flour, 100 g fat, 100 g sugar and an egg into a shortcrust pastry. Grease the baking pan and, if necessary, sprinkle with breadcrumbs. Line the mold with the dough. Peel the apples, remove the casing and use the grater to make small rasps. Sprinkle these well with sugar and cinnamon.
  2. Boil a vanilla pudding with 500 ml of milk. Then let it cool down. Make sure that it does not clump or get a skin. Separate the 3 eggs. Beat the egg whites with a pinch of sugar until stiff.
  3. In a separate bowl, beat the egg yolks and 150 g sugar until frothy. First stir in the quark and then the cooled vanilla pudding. Fold the egg whites into the mass.
  4. Pour the quark pudding mixture onto the shortcrust pastry. Squeeze the apples out so that they are not too juicy and then sprinkle them on the quark pudding mixture. Bake the cake at 170 ° C for about 50 minutes. Garnish the cake with chocolate icing as desired.
