Instructions

  1. Cook the rice in the vegetable stock until cooked. If you like, you can add a little chilli powder and cook with it. You can prepare the chilli rice the day before.
  2. Dice the peppers and onions, finely chop the cloves of garlic and, if desired, the chilli peppers. Place the black beans and corn on a sieve, rinse briefly with water and drain. Add a teaspoon of sugar to the chopped tomatoes in the can.
  3. Make a spice mix from salt, pepper, paprika powder, chilli powder, cumin powder and oregano.
  4. Heat a large pan strongly and add a tablespoon of oil. Sear the minced beef in it and add the spice mixture directly. Take the minced meat out of the pan as soon as it is crispy brown.
  5. Add the diced onions and peppers to the pan and fry for about two minutes. Then add the garlic and chili peppers. Also add chopped tomatoes, black beans and corn and cook everything until the vegetables are done but still firm to the bite. If the sauce is too runny, it can be thickened with a little cornstarch dissolved in cold water. Finally add the cooked chilli rice and the fried minced beef to the vegetables and mix everything together well.
  6. Preheat the oven to 200 ° C fan oven. Grease a large baking dish well with margarine or butter.
  7. Brush the wraps with sour cream, add the minced meat mixture and fold the wraps to the sides and roll them up tightly.
  8. Place the rolled burritos in the baking dish and spread thinly with a little butter. Pour the grated cheese over it and bake the burritos in the middle of the oven for about 15 to 20 minutes until the cheese is lightly browned.
