Instructions

  1. Bring the salted water to the boil and cook the cauliflower in it for about 4 minutes. Pour through a sieve and allow to drain.
  2. Preheat the oven to 200 ° C (convection 180 ° C). Grease a baking dish with 1 tablespoon butter, spread cauliflower and ham in it. Heat the remaining butter in a saucepan, stir in the flour, pour in enough milk and stir in to make a thick sauce. Stir in the cream, egg yolk and cheese and season well with salt, pepper and nutmeg.
  3. Pour this sauce over the cauliflower and bake in the oven (middle rack) for about 40 minutes. Tastes very good with potatoes.
