  1. Clean, wash and halve the beans. Put in boiling salted water and cook for about 18 minutes.
  2. Wash the meat and then pat dry with kitchen paper. Heat the oil and fry the fillets vigorously. Fry for about 15 minutes over a medium heat, turning occasionally, season with salt and pepper to taste. Take out of the pan, wrap in aluminum foil and let rest.
  3. In the meantime, peel and dice the onions and sauté them in the hot frying fat. Clean and wash tomatoes, cut in half as desired. Drain the beans. Add tomatoes and beans to the onions, fry for about 2 minutes, turning, and season.
  4. For the sauce, crumble the Gorgonzola. Heat 1/4 l water and milk in a small saucepan, stir the two bags for hollandaise sauce in them with a whisk until smooth. Bring to the boil, stirring constantly. Cut the cold butter into small cubes. Melt gradually in the syuce over low heat while stirring. Stir in the gorgonzola as well.
  5. Cut the fillets into slices. Put the vegetables in an ovenproof dish. Place the meat on top, pour the sauce over it and sprinkle with Gouda cheese.
  6. Bake in a preheated oven at 200 ° C for about 15 minutes.
  7. Serve with croquettes.
