First you peel 8 to 10 large potatoes and wash them carefully. Let this dry on a clean kitchen towel.
Meanwhile you prepare the mayonnaise. Mix the oil, egg yolk, salt, pepper, basil and chicken broth together finely so that a thickened mass is formed.
Cut the potatoes into small slices and quarter them. Depending on your preference, the size can vary, but these should not be too thick, 1 cm wide should be sufficient.
Now you put the potatoes on a baking sheet lined with baking paper and pour the sauce over them. Finally, add a pinch of fried chicken spice to the potatoes so that they get nice and crispy.
