Mix the yeast and lukewarm milk. Knead with the flour, melted butter, sugar, lemon zest, eggs and salt. Let rise for 30 minutes.
Weigh out 600 g of dough. Shape the rest into a 120 cm long roll and place on an oiled tray as a pretzel. Divide the remaining dough into thirds, shape each into 30 cm long rolls, braid. Brush with a little water, stick on the pretzel, let rise for 20 minutes. Preheat the oven to 170 degrees (convection 150 degrees).
Brush the pretzel with whisked egg yolk and bake for about 30 minutes.
