Whisk the eggs and add the flour and salt. Stir in enough milk to form a thin dough and let the dough swell for 10 minutes.
Preheat the oven to 80 degrees.
Finely chop the garlic and dice the feta.
Heat the olive oil in a pan and toast the garlic with the pine nuts and sesame seeds. Add the spinach, heat it and season it with plenty of salt and pepper.
Bake thin pancakes from the batter in a pan and keep them warm in the oven until they are all done.
Spread the spinach and feta on the pancakes, carefully roll up the topped pancakes and serve.
