Mashed new potatoes are cooked in Greek with spring herbs.

- Boil potatoes in their skins in salted water until tender. Then drain. Do not clean!
- Mash the potatoes straight in a saucepan with a fork in mashed potatoes, add butter, milk, salt, and pepper to taste.
- Then add cheese and herbs to the potatoes, stir and serve.
