Clean, wash and slice the zucchini. Heat the olive oil, fry the zucchini slices in it until translucent to light brown, sprinkle with dill. Put the zucchini and the frying liquid in a bowl, mix with the oil, lemon juice, vinegar, pepper, salt and sugar. Slice the tomatoes, wash the peppers and cut into strips. Cut the onions into slices. Mix the tomatoes, peppers and onions with the zucchini. Add the crumbled sheep`s cheese and parsley, stir everything well and let sit in the refrigerator for about an hour. Fold in the washed, torn lettuce leaves before serving.
