Instructions

  1. Cut the zucchini, aubergine and potatoes into cubes and place in the baking dish. Add approx. 1 cup of oil and place in the oven for 10 minutes at 180 ° C top / bottom heat.
  2. Chop the garlic and onion and fry in a small saucepan. Add the chopped tomatoes and simmer over low heat for 10 minutes.
  3. Cut the mushrooms and pointed peppers into small pieces. Pour into the baking dish and pour the tomato and onion mixture over it. Season well and return to the oven at the same temperature for approx. 1 hour. Stir a little every now and then if necessary so that it can cook evenly. Just before it`s done, add the feta cheese on top.
  4. Can also be delicious as an accompaniment to meat or rice.
