Peel off the skin of the Lyoner and cut the sausage into strips. Peel and halve the onion, then cut into fine strips and add to the sausage. Cut the pickles into thin slices and add to the sausage.
First remove the seeds from the peppers and then cut the pods into fine strips and add them to the salad. Cut the shepherd`s cheese into cubes and set aside. Add the olives to the salad. Wash and pat dry the parsley and chop very finely, add to the salad.
Make a dressing from the oil, the vinegar and a little cucumber liquid, a little salt, pepper, lemon juice and the herbs and mix with the salad. Season to taste.
At the very end, carefully fold in the shepherd`s cheese. Let it steep for a moment and then serve.
