Peel the cucumber, then grate it finely. Squeeze out well and throw away the juice or use it elsewhere. Mix the Greek yogurt with the quark and cucumber. Squeeze the garlic, depending on your taste you can use more or fewer cloves of garlic. Season with dill and season with olive oil, vinegar, pepper and salt.
Please make sure that you really use Greek yoghurt, it is firmer and fatter than our normal yoghurt!
Tastes great for grilling or with jacket potatoes!
