Mix the eggs, honey, yogurt and vanilla sugar very well. Dissolve gelatine in a small saucepan. Add about 4 tablespoon of the yoghurt mixture to the gelatin and stir well. Then add the gelatine to the yoghurt mixture and stir in very well with a whisk. Fold in the semi-firm whipped cream. Cover well in the refrigerator until serving, but at least 6 hours.
To serve, sprinkle with chopped walnuts and drizzle some honey over them.
A mocha or walnut schnapps goes well with it.
Tip:
If you want the mousse to be firmer, you should use 6 sheets of gelatine.
