Clean and dice the onions, sauté in 1-2 tablespoons of oil, add the cleaned and sliced carrots and sauté briefly. Now add the beans and deglaze with the vegetable stock. Let simmer until the vegetables are cooked but still firm to the bite (goes quickly, approx. 10-15 min.). Season everything heartily, possibly with savory or parsley. Refine with a good dash of cream and / or crème fraîche if you like.
