Ingredients
- 500 g beans, reen, cleaned, halved
- 250 g potato (s), waxy, small
- 80 ml extra virgin olive oil
- 3 tablespoon vinegar, (red wine vinegar)
- 3 cloves garlic, chopped
- 1 tablespoon oregano, dried
- 1 tablespoon parsley, freshly chopped
- 1 pinch (s) chilli, red
- salt and pepper
Instructions
- Cook the beans in 2 liters of boiling salted water for 8 to 10 minutes until they are crisp and soft. Drain well and set aside.
- Boil the potatoes until soft and peel them off, let them cool and cut into cubes. Add to the beans.
- Add all other ingredients to the vegetables and mix them together carefully using a large spoon.
- Can be served both warm and chilled.
