Cook the potatoes in salted water or broth until they are firm to the bite (approx. 5 minutes). Fry the onions and garlic in a little oil. Add the green beans and steam them until they are done but still have a bite. Add tomatoes and herbs, season well with the spices. Fold in the potatoes and heat.
This dish tastes best when warmed up, so it is ideal when guests come the next day.
