Wash and clean the green beans. Then blanch firm to the bite in boiling water for about 5-8 minutes. Then rinse in cold water and drain.
Rinse, dry and chop the anchovy fillets. Peel off the garlic cloves and pluck parsley leaves - chop both into small pieces.
Heat butter with olive oil in a large saucepan or pan. Add anchovies, garlic and parsley. Sweat briefly, then add the green beans and mix in. Pepper as needed. I then decide when seasoning whether salt is necessary next to the anchovies. Serve hot.
The recipe goes very well with roast beef (Brasato), with steaks or can also be served as a starter.
