Instructions

  1. Make a smooth pasta dough from the ingredients above. Preferably in a food processor. Let rest in the refrigerator for 1 hour. Roll out thinly. Then roll out into 10 cm wide strips and cut out squares. Real Swabians have a pasta machine, of course, so it`s a lot easier.
  2. Fry the pork belly in a little lard or butter. Add the rolls to the bacon, also diced small. Cut the onion tube into rings and add. Mix everything in the pan well and let it take some color. Add the beaten eggs and let them set. Cool a little and fill the pieces of dough with it. Fold into pockets, brush the edge a little with egg white and press the edges tightly.
  3. Let it steep in boiling meat broth or vegetable broth for about 10 minutes. Sprinkle with chives.
