Wash the rocket and spread two or three handfuls on two plates as a basis and set aside for the time being.
Chop the onion and fry it in a pan with the diced ham. Then add the aubergine and zucchini cut into smaller pieces to the pan - as well as the frozen vegetables, the frozen fries and the pine nuts. Fry everything for a few minutes until it is through or has a slightly brownish color.
Place a dollop of herb quark in the middle of the rocket. Distribute the contents of the pan evenly on the rocket on the plates while still warm. Finally, spread the salad dressing over the top.

Tip: Depending on your taste, the vegetables can be exchanged. Without the ham, it is also possible as a vegetarian variant. Instead of frozen fries, sweet potato fries can also be used very well.
