Peel and roughly chop the garlic bulb (maybe start with 5 - 6 cloves first). Use the hand blender to grind salt, garlic, caraway seeds and first 50 ml of white wine vinegar. Now add the parsley or the coriander greens as well.
Important: Now let the oil flow in slowly while constantly mixing (consistency)! Taste now and add more vinegar (if desired) to taste.
