Boil and peel potatoes, cut into pieces or slices,
Prepare the vegetable stock (a little stronger than indicated on the package or glass) and pour over the potatoes immediately. The potatoes must be covered. Stir and let cool.
Drain the vegetable stock. Peel the cucumber and cut into small pieces. Clean the spring onions and cut into rings. Chop the chives. Fold everything under the potatoes. Season well with vinegar, oil, salt and freshly ground pepper.
Let it steep for at least 2 hours.
Tastes very good with anything pan-fried, meatballs or grilled.
