Mix the lemon juice with honey, salt and pepper. Beat in the olive oil.
Clean the lettuce, roughly pluck, wash and carefully spin dry. Peel and core the melon and cut into 2 cm pieces. Cut the mozzarella into large pieces. Strip the mint leaves from the stems.
Mix the lettuce, melon, mozzarella and mint in a bowl and fold in the dressing.
Goes well with pan-fried or grilled food. Serve with baguette.
