Instructions

  1. Put the green spelled grist and flour in a saucepan, pour in the vegetable stock and bring to the boil. Simmer for approx. 5 minutes, stirring constantly, and allow to swell for approx. 30 minutes. Cook the pasta in plenty of salted water until al dente. Clean the leek, wash it thoroughly and cut into rings. Heat the oil in a pan, sauté the leek, add the green spelled and fry. Add the tomatoes and mix everything well. Season to taste with salt and pepper. Arrange the pasta on plates and add the mixture of green spelled and leek and serve. Serve garnished with chives if desired.
