Instructions

  1. Wash the eggplant and cut into slices about 4 mm thick. Salt both sides vigorously, preferably with salt from a salt mill.
  2. Let rest for at least 1 hour until large drops of water have emerged from the aubergines. Cook the aubergine slices on the grill for a few minutes on each side.
