Wash the pork neck, pat dry and cut into approx. 3.5 centimeters thick slices. For the marinade, mix the thyme, lime juice and zest, as well as the garlic with the oil. Season well with salt and pepper. Marinate pork neck steaks in it for 2 hours.
Remove the neck steaks from the marinade, drain well and grill them on the hot grillage for about 12 to 15 minutes while turning.
