Instructions

  1. First slice the zucchini lengthways into 2-3 mm thin slices, I always do this with the bread slicer, that`s the best way to do it. If you have three large zucchini, that`s about 48 slices.
  2. Mix the tomato paste and cream cheese, add a little milk if necessary, so that you can stir better. Salt and pepper. First brush the sliced zucchini with the tomato paste and cream cheese mixture, then place a thin slice of turkey ham and finally a piece of mozzarella on one end of the zucchini. Then roll up the zucchini slices. It is best to start with the end where the mozzarella is. Put everything on 8 skewers. Salt and pepper again.
  3. You can grill the zucchini straight away or let it drain a little, ideally put in a sieve and a plate underneath.
  4. I always prepare the skewers at lunchtime when there is a barbecue in the evening.
