Cut the avocado into small pieces and quarter the small tomatoes.
Prepare the basmati rice in a small saucepan according to the instructions on the packet. Drain and pour back into the pot. Add the avocado to the rice, mash with a fork and mix with the rice. Squeeze the clove of garlic and add to the saucepan with the parsley and mix everything well. Then add the tomato quarters and season with salt and pepper.
