Mix the oil, thyme, oregano, paprika powder and garlic in a bowl. Cut the meat crosswise into thin strips, mix with the spices and marinate for a good 15 minutes.
Cut the onions into rings. Cut the peppers into rings, removing the stem. Finely chop the parsley.
Salt the meat and fry it all over in a large pan over high heat. Add the onions and fry for another 5 minutes.
Serve the sliced meat with the pepper rings.
We eat the low-carb gyros with tzatziki or cucumber salad.
