Instructions

  1. For the gyros marinade:
  2. Stir the spices in oil until smooth, squeeze in the garlic. Spread the marinade on the chicken strips and mix well.
  3. For the tzatziki:
  4. Beat the cream cheese in the oil, whipped cream and lemon juice until smooth. Add the drained quark, sour cream, spices, herbs and pressed garlic.
  5. Peel the cucumber, cut in half lengthways and remove the seeds. Grate coarsely or finely on a vegetable grater. Squeeze out the excess cucumber water in a hair sieve and add to the mixture. Process everything into a homogeneous mass.
  6. Let the meat and tzatziki steep in the refrigerator for 2-3 hours. Whisk the eggs with the cream, spices and parmesan well.
  7. Melt butter in 3 pans.
  8. Divide the egg mixture over 2 pans, the liquid should completely cover the bottom. Always distribute well over a low heat with the back of a spoon. Every now and then tear the dough with a spoon so that the still liquid egg touches the bottom of the pan. Only the lower side should be fried! When the egg is set at the bottom and is still soft at the top, spread the cheese slices over it.
  9. In the third pan, sear the gyros on both sides for approx. 2 minutes, set aside if necessary.
  10. Carefully slide the omelets onto 2 plates. First spread the meat, then tzatziki, then fold the omelets in the middle.
  11. Toasted garlic baguette goes well with it.
  12. Leftover ingredients can be further processed into a summer salad as desired.
