Cut the cheese into 8 slices. Top 4 slices of toast first with 1 slice of cheese each, then with 1 slice of ham and again with cheese. Cover with the remaining slices of toast.
Whisk eggs well with a whisk or fork. Turn the slices of toast in it on both sides until everything is absorbed.
Heat the oil and butter together in a pan. Fry the toasts in portions over a medium heat on both sides for 4 minutes. They should be golden yellow and the cheese should be melted. Then keep warm and serve immediately when all the toasts are ready.
Variation: For a change, the cooked ham can be replaced with smoked turkey breast or fine salami.
Serve the ham and cheese toasts with grilled tomatoes or a tomato salad with spring onions and vinaigrette.
