Peel and chop the onions and garlic. Core the chilli pepper and also finely dice it.
Put the oil in a saucepan and brown the ham over medium heat. Then add the onions, garlic and chilli, sauté briefly, sprinkle with sugar and let caramelize. Stir in the tomato paste and toast a little. Pour in the balsamic vinegar and wine and let it boil down briefly. Then add the peeled tomatoes and the Italian herbs, salt, pepper, smoked salt and paprika powder and simmer uncovered over a low heat for about 45 minutes. Stir again and again. Season again to taste and fill into glasses.
The ham jam is a delicious spread, but also goes very well with grilling.
