Cook the pasta according to the instructions on the packet. You can also use leftovers from the day before.
Chop the herbs. Dice the onion. Peel the garlic clove and press it through the garlic press. Cut the ham into small cubes.
Heat the margarine in the pan and add the ham, fry for 2-3 minutes and stir again and again with a spatula. Now add the mixed herbs, garlic and onions and cook with them. As soon as everything has turned a nice color and the ham is slightly crispy, add the pasta and fry with it. Mix in a little crème fraîche or sour cream. Beat the eggs and pour over the pasta. Fry them, stirring, until they are thickened. Finally, season with salt and pepper.
Arrange on a plate and sprinkle with grated cheese.
A mixed salad with light yoghurt or balsamic dressing goes well with it.
My grandma brought the dish to the table as leftover food when I was little. I think the combination of herbs with onions and garlic makes the dish particularly tasty.
