Prepare the vinaigrette from the first 6 ingredients. Add the shallots or onions. Fold in the hand cheese and watermelon in approx. 3 cm pieces. Attention! The hand cheese is very clingy and does not like to be separated. It is advisable to add it in small portions and mix with the rest of the ingredients in between before the next portion follows.
Fresh baguette or ciabatta tastes good with it.
The recipe tastes good already freshly prepared. It can also be prepared for the next day, which of course allows the flavors to mix better.
