Cut the Harz cheese into thick slices. Peel the onions and slice or cut into fine rings. Cut the bacon into strips.
Fry the strips of bacon in a pan until crispy, then remove.
Mix the white wine vinegar and oil and mix with the cheese, onions, caraway seeds and bacon. Season to taste with salt and pepper. Wash the chives, cut into rolls and sprinkle over the salad.
It goes well with farmer`s bread with lard and fried onions.
