Instructions

  1. Cook the rice according to the package insert or with a rice cooker. Do not add too much salt to the rice when cooking, as the marinade / sauce will add flavor to the rice.
  2. Once the rice is cooked, it can cool down slightly so that it is lukewarm to eat, because poké bowls are more likely to be eaten lukewarm to cold.
  3. The mise en place begins at the same time, because it is important here that everything is prepared in good time. Personally, I put the cut ingredients aside in bowls so that everything is ready.
  4. Prepare the marinade / sauce: for this, the soy sauce, sesame oil, rice vinegar, Asian sauce and the sugar are mixed together in a small bowl. It is advisable to season everything again to suit your personal taste, but be careful: the soy sauce makes it very spicy. But that is very much put into perspective with the rice afterwards.
  5. Peel the mango and cut into cubes of approx. 1 x 1 cm. Wash the cucumber thoroughly and cut it in half lengthways. Depending on your taste, you can remove the seeds of the cucumber. Then cut into very narrow slices. Wash the cherry tomatoes and cut in half. Peel the shallots and cut into thin slices. Cut the salmon fillet into approx. 1 x 1 cm cubes.
  6. Lightly roast the sesame in a pan without fat so that it browns and then quickly remove it from the pan.
  7. Heat some oil in the same pan and steam the shallots. As soon as the shallots are lightly roasted, remove them from the pan.
  8. Sear the cubes of salmon in this hot pan (with a little oil if necessary) so that the salmon gets some roasted aromas on the outside and is nice and glassy on the inside.
  9. I used a deep plate to serve. First put some rice in the plate and add a little of the marinade. Then you can arrange the plate however you like. I made it here in different sections and at the end gave a little marinade and sesame over everything.
  10. Poké bowls are actually easy and relatively quick to make, even if it may look like rocket science. Apart from that, you can vary everything as you like.
  11. A recipe for a Poké Bowl, sometimes without raw fish, even if it doesn`t make it classic Hawaiian.
