Instructions

  1. In a bowl, mix the hazelnuts, sugar, whipped cream, cornstarch, and baking powder. Add the egg yolks and stir to combine.
  2. In a separate bowl, beat the egg whites on medium-high speed for 2-3 minutes until stiff peaks form.
  3. Gently fold the beaten egg whites into the hazelnut mixture with a whisk until just combined.
  4. Grease an ovenproof dish with butter and sprinkle with breadcrumbs. Pour the mixture into the prepared dish.
  5. Bake in a preheated oven at 170°C (338°F) for 25 minutes until set.
  6. Serve with wine foam sauce.
