Instructions

  1. Microwave potatoes are a good choice if you want it to be quick, especially if you cook them healthy. I usually make my potatoes like this now, even when I have time.
  2. Place small, unpeeled or peeled cut potatoes in a microwave container with a lid and pour approx. 2 tablespoons of brine (saturated rock salt solution) over them. Let stand for about 10 minutes and shake several times with the lid closed so that the brine is distributed with the starch.
  3. Then put in the microwave at 750 watts. After about 5 minutes, check how soft they are. Add a few minutes accordingly. Swirl the closed container 2-3 times during the cooking time to distribute the liquid.
  4. The result is quick potatoes that not only contain their own minerals, but also all the important minerals from the brine.
  5. Sprinkle with fresh parsley, if necessary a little olive oil.
  6. PS: If that`s too salty for you, you can of course dilute the brine a little.
  7. Production of brine:
  8. Pour German rock salt or Himalayan salt into a bottle and pour over spring water. The brine is ready after a few hours. When it is almost used up, simply add more water. The salt crystals only dissolve to the maximum degree of saturation!
  9. I asked an employee of the Bad Reichenhaller Salzstollen where you can buy the local rock salt in Brocken: nowhere! Only refined as table salt. But cattle leaks, e.g., from Baywa is pure rock salt! Although it has no official food approval, it is definitely pure rock salt. In Germany there is only the Reichenhaller tunnel and one in the east of Germany. But only without guarantee!
  10. An alternative is also Bickelbacher Rock Salt, but the ingredients shouldn`t be that good - at least better than refinery salt and not that expensive at all. You just have to buy 10 kg.
