Cut the bread slices into cubes. Peel and finely dice shallot. Roast both in the heated butter until golden brown.
Whisk eggs and milk with the spices in a bowl, add the bread and shallot mixture, cheese and a tablespoon of chives. Mix everything together and season to taste. The mass should be moist, but still malleable. Shape it into three cakes (like meatballs) and fry them in the heated clarified butter on both sides until golden brown. Serve sprinkled with the remaining chives.
