Wash the cabbage, remove the stalk and cut the cabbage into strips or pieces. Chop the onion into small cubes. Chop or press the garlic. Peel the potatoes and cut into cubes approx. 2 x 2 cm.
Put the potatoes in a large saucepan, pour the stock over them, add caraway seeds and Tabasco and stir in the tomato paste. Put the pot to one side.
Heat a pan with a bit of butter. Sauté the onions and garlic in it until translucent and then add a pinch of sugar. Add the minced meat and sear it. When the mince is seared, only season with salt and pepper.
Put the mass aside.
Heat the pan again with a piece of butter and sear the cabbage in it. Some pieces can get darker, that gives toasted aromas.
Now add the mince to the potatoes in the pot and then simply layer the cabbage on top. Close with the lid and simmer gently for a good 20 minutes over a very low heat. Stir completely once after approx. 15 minutes.
At the end you can spice it up as you like. You can also add a dash of soy sauce.
I serve it in medium-sized cereal bowls with a piece of baguette or crispbread.
