Instructions

  1. Cut the trout`s belly lengthways and remove the innards.
  2. Quarter the garlic and roughly chop the parsley.
  3. Rub each trout inside and outside with salt and pepper (not particularly sparingly), sprinkle with lemon juice and fill the bellies with garlic.
  4. Line a baking dish with aluminum foil so that the edges of the foil protrude far beyond the edges of the baking dish. Pour half of the olive oil on the foil, place the trout on top, pour the second half of olive oil and sprinkle with chopped parsley. Close the edges of the foil tightly and bake in the oven at 200 degrees for 20-25 minutes.
