Instructions

  1. Peel the onion and cut into fine cubes. Wash the parsley, shake dry and roughly chop.
  2. Pierce the sausages several times with the tip of a knife and fry them in 1 tablespoon of oil in a pan until crispy. Just before the end of the cooking time, add the bacon.
  3. Clean the mushrooms and remove the stem. Remove the sausages and bacon from the pan. Fry the mushrooms and onions in the frying fat plus the remaining oil. Take out the mushrooms.
  4. Put the beans and tomatoes in the pan, season well with parsley, sugar, salt, pepper and chili powder, slowly bring to the boil and then simmer for about 5 minutes.
  5. Add the mushrooms, bacon and sausages to the beans. Carefully place the eggs in 2 small hollows and let them set for about 10 minutes over moderate heat. The yolk should stay soft while doing this.
