Instructions

  1. Mix the flour with the dry yeast, oregano and salt. Then add the water with the applesauce and knead until an elastic dough is formed. Now mix the ham, grated cheese and chopped onion and work under the batter.
  2. Cover and let rest for about 30 minutes, then shape a loaf, place on a baking sheet and let rise for another 30 minutes in a warm place
  3. Heat the oven to 250 degrees (top / bottom heat), cut into bread, spray with water and slide it into the oven. After about 10 minutes, reduce the heat to 200 degrees, after about 10 minutes switch down to 180 degrees. The bread is ready after approx. 60 minutes (do a knock test!).
  4. The applesauce does not taste sweet, it only serves to give the bread a very airy consistency and to make the crumb soft and elastic.
  5. Variants: Herbs from Provence can be used instead of oregano.
  6. You can e.g., replace 100 g of flour with rye 997, then replace the water with buttermilk, which gives an even more rustic taste.
